Beacon

Beacon is one of our favorite beers to drink as it is really the best of both worlds for two of our favorite styles of beer, saison and sour ale. Beacon is technically a "biere de coupage," which is a blend of "young" and "old" saison. The young portion brings a hoppy element as well as the peppery and zesty elements that we love so much in a saison, while the old portion is the same beer but aged with a variety of microflora in French oak for a year. Over that time the beer develops a light acidity, some funky complexity, and a touch of tannin from the oak. We then blend the two along with a touch of lemon verbena to create a product that is truly greater than the sum of its parts. The blend is then naturally re-fermented in the bottle to a high level of carbonation, resulting in a complex, yet super easy drinking beer.
