Pen Name release

Pen Name is a blended golden sour ale that is double barrel aged. It spends the first six to eight months of its conditioning time in neutral French oak, developing a subtly nuanced profile and acidity from the mixed culture secondary fermentation. It is then racked into freshly emptied bourbon barrels. Finally, within the last week of aging - just prior to bottling - the beer is given a treatment of lemon zest to add bright notes that balance with the oak's complement of vanilla and toffee. The end result is a beer that boasts flavors across a spectrum of aged and "fresh," for a supremely drinkable sour ale.
